Hot Vinegar

Hot vinegar is made of chilies and vinegar, that's all.  It is used to get extra heat without extra flavor to almost anything.  When added during cooking, the vinegar taste disappears.  You might notice the taste a little in non cooked items, similar to the flavor of canned jalapenos.

Add equal parts of chilies and white vinegar to a saucepan; bring to a boil. I measure the amount by adding chilies and vinegar to the jar I am planning to store them in before I cook them.  Simmer 5 to 10 minutes.  Pour into a sterilized jar.  To sterilize boil the jar and lid in water for 10 minutes, keep in the hot water until ready to use.  I re purpose olive oil bottles for vinegars, sauces and oils, they work perfectly.  A word of caution, when you sterilize a jar always put a towel on the counter and the hot jar on top of the towel, otherwise you take the risk of the jar breaking.  For a week store in a cool dark place.  After a week you can remove the chilies or leave them in.  If you leave the chilies in the vinegar will continue to get hotter as it is stored.  The uses are endless.  Eat the chilies with your green salads as you use the vinegar.
